Lite BBQ Salad

One of my favorite things in the world is BBQ Chicken salad, but any trip to California Pizza Kitchen will tell you that ordering one of these yummy treats in a restaurant will set you back between 700-1200 calories. NOT what you need after all that hard work in the gym! So use my recipe here and with less than 250 calories, 6g healthy fat and 15 g protein, you'll stay slim and fit this summer:

Ingredients:
  • 2 cups baby spinach leaves
  • 8-10 baby carrots, cut in thirds
  • 6 fat slices cucumber, each cut into quarters
  • 1/4 cup avocado (about 1 large slice) - cut into cubes
  • 1/8 cup diced red onion (optional)
  • 4 slices turkey or chicken deli meat (lean, thin cut) - cut into chunks or strips
  • 1 tbs. lite italian salad dressing (look for one around 50 cals per 2 tbs. serving)
  • 1 tbs. BBQ sauce (look for one around 50-60 cals per 2 tbs. serving - most are)

Make it:
  • Chop all veggies and deli meat as listed above and set aside
  • In your salad bowl, first mix the 1 tbs. lite italian dressing with 1 tbs. BBQ sauce
  • Add veggies, toss, then top with meat
  • Enjoy!

Calorie Count: About 233 (assumes deli meat at 80 calories, avocado 58, dressing 60).
