
Ingredients:
- 2 cups baby spinach leaves
- 8-10 baby carrots, cut in thirds
- 6 fat slices cucumber, each cut into quarters
- 1/4 cup avocado (about 1 large slice) - cut into cubes
- 1/8 cup diced red onion (optional)
- 4 slices turkey or chicken deli meat (lean, thin cut) - cut into chunks or strips
- 1 tbs. lite italian salad dressing (look for one around 50 cals per 2 tbs. serving)
- 1 tbs. BBQ sauce (look for one around 50-60 cals per 2 tbs. serving - most are)
Make it:
- Chop all veggies and deli meat as listed above and set aside
- In your salad bowl, first mix the 1 tbs. lite italian dressing with 1 tbs. BBQ sauce
- Add veggies, toss, then top with meat
- Enjoy!
Calorie Count: About 233 (assumes deli meat at 80 calories, avocado 58, dressing 60).
