Pancakes for breakfast!


I love pancakes topped with fresh berries, but need to make them healthy of course. Here are a couple of favorite recipes you can use too:


High Protein Pancakes (approx 150 cal/ea)
1 cup of low-fat or non-fat cottage cheese
2 egg whites
1/4 cup of water
2 scoops protein powder
1 cup of whole wheat pancake mix


Blend egg whites, cottage cheese, and water in a blender until it reaches a liquid consistency. Transfer to a bowl and fold in the protein powder with blended ingredients in a bowl. Stir in the pancake mix until lumps are gone (but mix is not too runny). Cook as normal on a hot non stick pan (or spray with nonstick cooking oil). Makes 10-12


Oats & Egg Whites (approx 80 cal/ea)
4 egg whites
1/2 c. Oats, blended in blender
1/2 tsp baking powder
1/4 tsp salt


Beat eggs lightly. Combine oats, baking soda, salt in a separate bowl. Add eggs and mix. Cook as normal on a hot non stick pan (or spray with nonstick cooking oil). Makes 4-6

Topping ideas:
Fresh or frozen berries (approx 40 cal)
1 tb Peanut butter & 1/2 banana (approx 140 cal)
1oz Pure maple syrup (approx 100 cal)
